Ingredients
- 1 can (28 oz) peeled whole tomatoes
- 1 yellow onion, chopped
- 1/2 cup cider vinegar
- 1/3 cup corn syrup
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dry mustard
- Pinch of allspice
- Pinch of ginger
- Pinch of celery seed
- Pinch of cinnamon
- Pinch of ground cloves
- S & P to taste

Step 1
Pass tomatoes through a tomato press to remove seeds. In a blender, process tomato puree and onion until smooth, 25-30 seconds. In a saucepan over medium heat, combine tomato-onion mixture, vinegar, corn syrup, cayenne pepper, mustard, allspice ginger, celery salt, cinnamon and cloves and stir to mix. Bring mixture to a simmer, stirring occasionally, and reduce heat to medium-low. Continue cooking, stirring occasionally, until ketchup thickens and is reduced to about 1 1/3 cups--about 1 hour. Season with S & P, remove from heat and cool to room temp. Refrigerate until ready to use.
