Easy Lemon Pudding Cookies

Ingredients

• 1 cup Bisquick original baking mix
• 1/2 tsp ground ginger {optional}
• 1 package {4 serving} lemon flavor instant pudding
• 1 egg lightly beaten
• 1/4 cup vegetable oil
• sugar
• 3 squares bakers premium white baking chocolate melted

Preparation

Step 1

Heat oven to 350*. Stir baking mix,pudding mix and ginger in medium bowl. Mix in eggs and oil until well blended. [mixture will be stiff] With hands, roll cookie dough into 1 inch diameter balls. Place balls 2 inches apart on lightly greased cookie sheets. Dip flat bottom glass into sugar. Press glass onto each dough ball and flatten into 1/ 4inch thick cookie. Bake 10 minutes or until edges are golden brown. Immediately remove from cookie sheets. Cool on wire racks. Drizzle cookies with melted white chocolate. Makes about 20 cookies.
