Ingredients

  • 4 (1/4) pound boneless pork loin chops, trimmed.
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 3 cups cauliflower florets (Frozen ok)
  • 1/4 cup reduced-sodium chicken broth
  • 2 large oranges, peeled and sectioned
  • 2 Tbp chopped Walnuts

Step 1

1. Place the pork chops between sheets of wax paper. With a meat mallet or rolling pin, pound the chops to 1/4 inch thickness. Season with the salt and pepper.

2. Spray a large nonstick skillet with nonstick spray and set over medium heat. Add the pork chops and cook until browned and cooked through, about 2 minutes on each side. Transfer to a platter; set aside.

3. Add the cauliflower and broth to the skillet; cook, covered, until the cauliflower is tender, about 5 minutes. Add the Orange sections, walnuts, pork, and any accumulated juices. Cook until heated through, about 1 minute longer.
