Step 1

In a small saucepan over medium-high heat, combine water, sugar and ginger. Bring to a boil.

Reduce heat and simmer until sugar dissolves, about 5 minutes. Simmer 30 minutes longer. Let cool.
Strain syrup through cheesecloth or a fine mesh sieve into a jar or small pitcher; for stronger flavor, refrigerate overnight before straining. Refrigerate and use within 1 week.

Ginger Ale Adaptations
Take a glass of our Original Ginger Ale in three different directions:

Ginger Float: Add a scoop of vanilla ice cream. For something fruity (and colorful!), substitute raspberry or lime sorbet.

Citrus Ginger Soda: With a muddler or wooden spoon, muddle—crush and press to bruise—lemon, lime, orange and/or kumquat slices in a glass. Top with ginger ale and garnish with a skewer of kumquats or citrus slices.

Ginger Melon Cooler: Instead of citrus fruits, muddle ripe honeydew or cantaloupe. Finish with a strand of melon balls and sprig of mint.
