Ingredients
- 2 pounds dried navy beans
- 1 medium onion sliced
- 4 tsp cider vinegar
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 3/4 pound bacon diced
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp mustard
- 1/2 cup molasses
- Pepper

Step 1
Wash beans and put in 4 quart saucepan. Add water to come 2 inches over the beans. Soak overnight, drain and cover with fresh water. Add soda and bring to a boil drain again and rinse. Cover with cold water and bring to a boil. Put the onion and seasoning in bottom of casserole dish. Add hot beans and liquid to barely cover. Lay strips of bacon over top cover and bake at 250*. Until beans are tender 9 to 10 hours, adding more boiling water as it evaporates. Remove, cover and bake 1 hour longer. May add more sugar and molasses.
