Ingredients
- Dressing:
- 2 tbs cider vinegar
- 2 to 3 tsp dried Cajun seasoning
- 1/3 cup vegetable oil
- Salad:
- 1-9 ounce frozen diced cooked chicken breast
- 2 cups cold cooked rice
- 3 stalks [1 cup] diced celery
- 6 -[1/3 cup] green onions chopped
- 1 [1 cup ] large tomato diced
- 1 [1 cup] medium green pepper diced

Preparation
Step 1
In a large bowl, combine vinegar and Cajun seasoning, mix well with wire whisk. Gradually beat in oil until well blended. Add salad ingredients, toss to coat. Serve immediately, or cover and refrigerate until serving time.
