Ingredients

  • 3 + cups reduced-fat “light” vanilla ice cream (or vanilla frozen yogurt), softened
  • 1 1/4 cups chopped pitted fresh or frozen cherries, divided
  • 1 9-inch chocolate-cookie pie crust (or oreo cookies, 1/2 stick butter)
  • 2 tablespoons mini chocolate chips

Preparation

Step 1

1. If making your own crust blend oreo cookies and 1/2 stick of butter in a food processor. Press into pie pan.

2. Gently combine ice cream and 1 cup cherries in a large bowl (or in a food processor). Transfer to the crust and garnish with the remaining 1/4 cup cherries and chocolate chips. Freeze until firm, at least 4 hours.
