Ingredients

  • 1 cup self-rising yellow cornmeal
  • 1/2 cup flour
  • 1 tea. salt
  • 1/2 tea. pepper
  • 1/2 te.a Creole seasoning
  • 1 cup whole buttermilk
  • 4 large firm green tomatoes, cut into 1/2" slices
  • vegetable oil for frying
  • Garnish: roasted salsa

Preparation

Step 1

In a shallow dish, combine cornmeal, flour, salt, ppper and Creole seasoning. In a separate bowl, place buttermilk. Dip tomato slices in buttermilk (making sure to coat completely); dredge in cornmeal mixture (making sure to coat well on all sides), shaking off excess.

In a large skillet, pour oil to a depth of 1/2"; heat to 375 degrees. Fry tomato slices, in batches, 4-5 minutes per side or until golden brown.

Drain on a wire rack over paper towels.

Serve with salsa if desired.
