Ingredients
- SEASONED BEEF
- 1 whole beef brisket, about 10 to 15 pounds
- 1 cup kosher salt
- 1/2 cup freshly ground black pepper
- 1 tablespoon granulated garlic
- 1 teaspoon cayenne
- Trim the brisket fat. Combine all spices and rub well onto all sides of the meat.
- GURU DUST
- 2 1/2 tablespoons smoked paprika
- 2 tablespoons kosher salt
- 2 tablespoons granulated sugar
- 1 tablespoon turbinado sugar
- 2 tablespoon chili powder
- 1 tablespoon freshly ground pepper
- 1 tablespoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Make a dry rub by mixing all ingredients in a small bowl.
- BEEF BRISKET
- Guru Dust (above)
- Seasoned Beef (above)
- 1 loaf artisan bread
- Apply Guru Dust dry rub liberally to the meat.

Preparation
Step 1
Put brisket into a preheated 200 degree Fahrenheit smoker and smoke it for 12 to 16 hours, calculating based on approximately 1 and 1/2 hours per pound of meat. Shift the position of the brisket every 2 hours.
Remove when the brisket is tender and has reached an internal temperature of 190 degrees Fahrenheit. Transfer it to a cutting board and slice on the bias. Arrange on a serving platter and serve with artisan bread.
