Ingredients
- 1/2 cup butter
- 1/2 cup shortening
- 1 tsp vanilla
- 1 tsp coconut extract
- 1-8 ounce package cream cheese
- 3 cups sugar
- 1/4 tsp baking soda
- 6 large eggs
- 1/4 tsp salt
- 3 cups flour
- 1-6 ounce frozen coconut

Step 1
Beat butter, shortening, cream cheese until soft and creamy. Gradually add sugar 5 to 7 minutes. Add eggs 1 at a time until yellow disappears. Combine flour, baking soda, salt add to butter and mix on low speed until blended. Stir in coconut and coconut extract. Pour batter into greased/ flour 10 inch tube pan. Bake at 350* for 1 hour and 30 minutes.
