Ingredients
- Chocolate coating:
- 3/4 cup mashed potatoes
- 1-16 ounce confectionery sugar
- 4 cups flaked coconut
- 1 tsp almond extract
- 2 tbs soft butter
- 2 tbs corn syrup
- 3 tbs water
- 1 package of fudge frosting mix

Preparation
Step 1
Mix all ingredients. Drop mixture by heaping tsp onto wax paper. Roll into balls, chill 1/2 to 1 hour until firm [if to soft] chill before shaping. In double boiler, mix butter, corn syrup and water. Stir in dry frosting mix until smooth. Heat over rapidly boiling water for 5 minutes. Using tongs dip balls into coating. Remove and place on waxed paper and chill until firm.
