Ingredients
- 2/3 cup butter
- 2/3 cup flour
- 7 cups milk
- 2.5 lb bag of red potatoes with skin on- cut into bite size
- 4 lg baking potatoes, baked cooled peeled and cubed
- 4 green onion
- 1 lb bacon – cooked /crumbled
- 1 1/4 cups shredded cheddar cheese
- 1 cup sour cream
- 3/4 tsp salt
- 1/2 tsp pepper

Preparation
Step 1
Don’t pr-cook red potatoes- melt butter, stir in flour until smooth and bubbly gradually adding milk, stirring constantly until sauce thickens. Add potatoes and onions- continue to cook stirring constantly until soup begins to bubble. Reduce heat simmer for approx. 10-30 min making sure potatoes are cooked- add remaining ingredients- stir until cheese is melted.
