Ingredients

  • 2/3 cup butter
  • 2/3 cup flour
  • 7 cups milk
  • 2.5 lb bag of red potatoes with skin on- cut into bite size
  • 4 lg baking potatoes, baked cooled peeled and cubed
  • 4 green onion
  • 1 lb bacon – cooked /crumbled
  • 1 1/4 cups shredded cheddar cheese
  • 1 cup sour cream
  • 3/4 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

Don’t pr-cook red potatoes- melt butter, stir in flour until smooth and bubbly gradually adding milk, stirring constantly until sauce thickens. Add potatoes and onions- continue to cook stirring constantly until soup begins to bubble. Reduce heat simmer for approx. 10-30 min making sure potatoes are cooked- add remaining ingredients- stir until cheese is melted.
