Ingredients

  • 1 eggplant
  • 1 large onion, chopped
  • 1/2 cup beef boullion
  • 1 cup tomato juice
  • 1 can tomato paste
  • 2 cups ground lamb (1 pound)
  • 5 Tablespoons butter

Preparation

Step 1

1. Peel eggplant. Dip slices in flour and fry.

2. Chop large onion and sauté in 5 Tablespoons butter. Add 1/2
cup beef boullion--keep hot. Blend in 1 cup tomato juice and
1 can of tomato paste.

3. Brown the lamb in 4 Tablespoons butter, and season with S&P;
Add to onion mix.

4. Alternate layers of eggplant and onion/lamb mix in a casserole dish.

5. Dot with butter and bake at 350 degrees for 1 hour.
