Ingredients
- 6 cups chicken broth, divided
- 1/4 teaspoon salt
- 1/2 teaspoon grated fresh ginger
- ....* 1 grated garlic clove
- 1/4 cup finely sliced spinach leaves
- ....* 1/4 teaspoon white pepper
- ....* 1 teaspoon rice wine
- 1 1/2 tablespoons cornstarch
- 2 eggs
- 1 egg yolk
- ....* 4 green onions, finely sliced
- ....* 1-1/2 teaspoons sesame oil, or to taste

DIRECTIONS
1. Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan. Stir the salt, ginger, spinach, and garlic into the saucepan, and bring to a rolling boil. Add pepper, and rice wine.
In a cup or small bowl, stir together the remaining broth and cornstarch until smooth. Set aside.
2. In a small bowl, use a fork to mix the eggs and yolk VERY lightly.
Remove the pot from the heat. Immediately drizzle the egg, a little at a time, through the fork into the boiling broth mixture. Stir the contents of the pot in a clock-wise direction, for one minute.
Stir in the cornstarch mixture, gradually, until the soup is the desired consistency.
Sprinkle with sliced green onions and add sesame oil, and serve
