Ingredients

  • 6 cups organic baby carrots
  • 4 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp light brown sugar
  • 4 tbsp finely chopped green onions
  • 4 tbsp sesame oil
  • 2 tbsp peeled, minced ginger
  • Salt to taste

Preparation

Step 1

Steam carrots for about 6 to 8 minutes, or to desired tenderness. Remove and run under cold water to stop the cooking process.

Meanwhile, in a small bowl, whisk together vinegar, soy sauce and brown sugar. Add green onions and slowly whisk in sesame oil and ginger. Season to taste with salt.

Gently toss the baby carrots in the vinaigrette and serve at room temperature or chilled.
