Ingredients
- 1/2 cup regular long-grain rice
- 1 cup water
- 1 Kirby cucumber
- 1/4 lb. sliced red bell pepper
- 1/4 cup grated Parmesan cheese
- 2 green onions
- 1 tbsp. minced fresh basil(or)1 tsp. dried basil
- 2 tbsps. olive oil
- 2 tbsps. cider vineagr
- 2 tbsps. plain low-fat yogurt
- 1/2 tsp. Dijon mustard
- Freshly ground pepper to taste

Step 1
Place rice and water in saucepan and bring to a boil. Reduce heat. Cover and simmer about 17 minutes, until rice is tender and water has been absorbed. Wash and slice cucumber. Do not peel. Coarsely dice pepper. Wash, trim and slice green onions. Combine cooked rice with vegetables and dressing. This tasty salad also has eye-appeal.
