What it is: Bulgur has a granular texture and a nutty flavor. Often sold in coarse and medium-size granulations, it’s made from steamed, dried, and cracked wheat.
Why it’s good for you: Bulgur is a good source of potassium, B vitamins, iron, and calcium. It has the same amount of protein as brown rice but has less fat and more fiber.
Best uses: This Middle Eastern favorite is suited to tomatoes, cucumbers, parsley, and mint (think tabbouleh), as well as dried fruits, nuts, and cinnamon.
