Ingredients
- 1 1/2 # Baby Spinach Washed & Bite Size
- 6 Strips Crisp Crumbled Bacon
- 1/2 C Slivered Almonds
- 2 Hard Boiled Eggs Sliced
- 3 T Green Onions Sliced
- 1/2 C EVOO
- 1/4 t Salt
- 6 T Tarragon Wine Vinegar
- 2 t Sugar
- 1 t Dry Mustard
- Dash of Pepper

Preparation
Step 1
Preheat Oven 250F, Toast Almonds 6-8 Minutes
Large Bowl, Add Spinach, Almonds, Bacon, Egg & Onions.
Small Bowl, Whisk Vinegar, EVOO, Salt, Sugar, Mustard & Pepper.
Pour Over Spinach & Toss Gently.
