- 2 cups all purpose flour
- 24 pks sucralose-based sugar substitute
- 1 Tbsp. baking soda
- 1 Tbsp. ground cinnamon
- 2 eggs, lightly beaten
- 1/2 cup applesauce
- 1/2 cup honey
- 4 cups shredded carrots
- Frosting
- 1/2 cup light, whipped cream cheese
- 1 Tbsp. powdered sugar
- 2 pks sugar substitute

Preparation
Step 1
1. Preheat oven to 375 degrees F. Lightly spray 13x9" pan with cooking spray. Sift together flour, sugar substitute, baking soda and cinnamon in large bowl.
2. Combine eggs, applesauce, honey and carrots in medium bowl. Stire carrot mixture into flour mixture just until moistened. Spread batter into prepared pan. Bake 20-25 minutes or until toothpick inserted in center comes out clean.
3. Cool in pan on wire rack. White cake cools, prepare frosting. Stir together cream cheese, powdered sugar and sugar subtitute in small bowl. Place frosting in small resealable bag and squeeze into corner. Snip corner with scissors. Cut cake into squares. Squeeze dollop of frosting onto each square.
