  • 25 g butter
  • 4 freerange or organic eggs
  • 50 g Gruyère cheese(or another hard cheese such as cheddar or gouda), grated
  • 1 teaspoon mustard
  • 1 tablespoon double cream
  • sea salt and freshly ground black pepper
  • slices of bread, to serve

Preparation

Step 1

This must be the most scrumptious way to cook eggs. When baking the eggs, make sure that you bake only one or two in a dish at a time because the eggs on the outside get overcooked if you cook more than that. Preheat the oven to 180°C.

Grease 2 small ovenproof dishes with the butter and crack 2 eggs into each one.

Put the cheese into a small bowl and mix in the mustard and cream. Season with salt and pepper. Scoop the cheese mixture on top of the eggs and bake in the oven for 10 minutes.

Serve with toasted bread cut into thin slices so that you can dip them into the eggs.


Variations
Add 70g of smoked bacon lardons to the cheese mixture.

Omit the cream mixture and place 4 thin slices of spicy chorizo on top of the eggs.

Wilt 70g of baby spinach in a frying pan with some butter and bed the dishes with the
spinach before you crack in the eggs.

Try sprinkling some breadcrumbs on top of the
cheese mixture to get a nice crispy finish.
