Ingredients

  • 5 lbs Yukon gold potatoes
  • 1 stick of butter
  • 3/4 cup heavy cream or half and half
  • salt and pepper, to taste

Preparation

Step 1

Rinse potatoes. Slice larger potatoes in half, but do not peel.
Place potatoes in large pot and cover with water. Bring to a boil over high heat, then cook over medium heat for 20 minutes or until fork tender. Drain potatoes and return to pot.


While potatoes cook, heat butter, 3/4 cup half and half and salt and pepper in a saucepan over low heat until butter is melted and mixture is war. Mash drained potatoes with a hand masher or mixer. Stir in butter and cream mixture until completely combined.

IF NECESSARY, TO MAKE AHEAD AND NEED TO KEEP WARM:

Add 1/2 cup heavy cream or half and half to the bottom of a crock pot. Add mashed potatoes and spread evenly over bottom of pot keeping warm on low heat setting.
