Stir-Fried Spinach with Garlic

This simple combination makes a great side dish for a main course of roasted vegetables or a hearty soup. A dusting of freshly grated Parmesan cheese brings all the flavors together.

Ingredients
- 1 tablespoon olive oil
- 2 bunches spinach, about 1/2 pound each, carefully washed and well dried
- 2 cloves garlic, minced
- Salt and freshly ground pepper
- 1 tablespoon grated Parmesan cheese

Step 1
In a wok or frying pan over medium-high heat, warm the olive oil, swirling to coat the bottom and sides of the pan. When the oil is hot, add the spinach and stir and toss rapidly for about 1 minute. Cover and cook until wilted, about 2 minutes longer. Uncover and raise the heat to high to boil away any excess liquid.
Add the garlic and cook for 1 minute longer. Season to taste with salt and pepper.
Spoon into a warmed serving bowl, sprinkle with the Parmesan cheese, and toss to mix. Serve immediately.
