Ingredients
- 3 pounds Roma tomatoes
- 1/4 cup olive oil
- 3 ounces Spanish onion, cut into small dice
- 1 tbsp chopped garlic
- 1 tbsp chopped fresh basil
- Pinch of chopped fresh thyme
- 1 1/2 tsp kosher salt
- 3 grinds of fresh black pepper
- 1 tsp sugar

Preparation
Step 1
Prepare a pot of boiling salted water and a bowl of ice water.
With a paring knife, remove the stem from each tomato and score the opposite end. Drop tomatoes into the boiling water just long enough for the skin to crack; then remove and place immediately in ice water.
Peel the tomatoes and roughly chop.
Heat olive oil in a saucepot over medium heat. Add onions and cook until translucent. Add garlic and tomatoes. Reduce heat to a simmer and cook, uncovered, for 1 hour, stirring occasionally.
When the sauce has cooked down to the desired consistency, add herbs and season to taste with salt, pepper and sugar.
