Tomato and Feta Cheese Salad

Ingredients
- 3 cups diced tomatoes, or halved grape or cherry tomatoes
- 1/2 cup halved pitted black olives
- 1/3 cup sliced red onion
- 1 Tbs. extra virgin olive oil
- 1 Tbs. red wine vinegar
- 1/2 cup crumbled feta cheese
- freshly ground balck pepper to taste

Preparation
Step 1
In a large bowl, toss together the tomatoes, olives and onion. Add the oil and vinegar. Toss to combine. Add the feta cheese, grind the pepper over the top, and toss again.
VARIATION:
Add 1/2 tsp. dried oregano with the oil and vinegar.
VEGAN VARIATION:
Substitute sliced hearts of palm for the feta cheese.
