Blueberry-Lemonade Iced Tea 1 Picture

Ingredients

  • 16 ounces frozen unsweetened blueberries
  • 4 cups water
  • 10 orange & black pekoe tea bags (Our Family brand at Hillers)
  • 3 cups blueberry juice (I used Ocean Spray Sugar-free)
  • 1 (1/2 ounce) container sugar-free lemonade mix- See note at the beginning of the recipe

Preparation

Step 1

1. In a large saucepan, add the frozen blueberries and water.
2. Bring water to a boil, stir once or twice while waiting for the water to come to a boil.
3. After the water comes to a boil, reduce heat to a simmer, cover the pan, and simmer the berries for 10 minutes.
4. Remove the pan from the heat, and strain the water/blueberries, reserving the water.
5. Add the tea bags to the saucepan of reserved blueberry water, cover the pan and steep the tea for 1 hour.
6. Remove the tea bags and strain the tea twice to remove blueberry residue.
7. Pour the blueberry-tea into a heat proof glass pitcher.
8. To the pitcher, add one tub of the sugar-free lemonade mix and give the mixture a good stir.
9. Add the Ocean Spray blueberry juice.
10. Chill. Serve over ice.
