Ingredients

  • 3 med. Conchs - pounded & ground or chopped fine
  • 2 Celery ribs sliced thin or chopped
  • 4 cups Water
  • 2 Tbsp. Thyme
  • 4 Tbsp. Baking Powder
  • 2 small Onions finely chopped
  • 1 Tbsp. Tomato Paste
  • 4 Hot Peppers
  • 4 cups Flour
  • Lime Juice

Preparation

Step 1

Chop or mince conch in blender. Add lime juice to help chop the conch.

Mince celery and onions. Mix all together. Salt to taste. Set aside for 10-15 minutes to rest.

Heat oil to 350. Drop 1 teaspoon at a time. Dry on paper towel. Makes 40 fritters.
