Peppered Beer-Braised Brisket

Ingredients
- 1 beef brisket (about 4 1/2 lbs.)
- 1 T. peppercorn herb roasting rub
- 2 T. oil
- 1 bottle (12 oz.) stout beer, like Guinness
- 1 can (5.5 oz.) apple juice
- 1 T. apple cider vinegar
- 1 t. dried thyme
- 1 large onion, peeled and chopped
- 1 bay leaf
- 1/2 cup apple jelly
- 2 T. Dijon mustard

Step 1
Heat oven to 350 degrees. Season beef with 1 T. peppercorn herb roasting rub. In Dutch oven over high heat, cook beef in oil 6 minutes or until browned, turning once. In bowl, combine beer, apple juice, cider vinegar and thyme.
Arrange onions and bay leaf around beef. Pour beer mixture into Dutch oven. Cover; place in oven. Cook 2 hours/30 minutes, or until thermometer inserted in meat reads 180 degrees F. Transfer brisket to platter.
In saucepot over medium-high heat, cook jelly and mustard 1 minute or until just melted; brush on beef. Let sit 10 minutes before slicing.
