  • 1/2 cup lemon juice
  • 1/4 cup sugar
  • 1 box yellow cake mix
  • 1 pkg. (3 oz.) instant lemon pudding
  • 1 T. fresh lemon zest
  • 1 pt. fresh blackberries, divided

Step 1

Heat oven to 350 degrees. In small saucepot over medium-high heat, cook lemon juice and sugar 2 minutes or until sugar is completely dissolved, stirring occasionally; set aside.
In bowl with electric mixer, combine cake mix and pudding mix. Prepare cake mix according to package directions, adding lemon zest. Stir in 1/3 blackberries. Pour batter into greased and floured Bundt pan.
Bake 40 minutes and do toothpick test. Let cake cool in pan 5 minutes. Invert onto wire cooling rack. Brush lemon-sugar mixture evenly over cake to coat. Let cool completely.
Transfer cake to serving platter. Fill center with remaining blackberries. Dust cake with powdered sugar, if desired.
