Ingredients
- 3 medium potatoes, peeled and cubed
- 1 small carrot, grated
- 1/2 small onion, chopped
- 1/4 cup chopped green pepper
- 1 tblsp. beef bouilion granules
- 1-1/2 cups water
- Dash of Pepper
- (FIRST SEVEN ABOVE)
- 1 lb. ground beef
- 1 tblsp. butter
- 2-1/2 cups milk, divided
- 3 tblsps. all-purpose flour
- 8 ounces Velveeta cheese, cubed
- Bacon, cooked and crumbled (2-4 slices)

Step 1
Cook and crumble desired amount of bacon.
In a soup kettle, combine the first seven ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Meanwhile, in a large skillet, cook beef in butter over medium heat until meat is no longer pink; drain. Add to soup. Stir in 2 cups milk; heat through. In a small bowl, combine flour and remaining milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Garnish with bacon.
