  • 3/4 lb rhubarb, cut into 1/2-inch slices
  • 3/4 cup sugar
  • Juice of 1/2 lemon
  • 1 tsp vanilla extract
  • 2 cups Greek yogurt

Preparation

Step 1

Add rhubarb, sugar, and lemon juice to heavy saucepan. Cook over medium; stir until sugar melts. Cover; cook 4 more minutes. Remove lid, turn up heat, and boil 8 minutes or until thick, stirring occasionally. Add vanilla. Refrigerate at least 30 minutes.

To serve, layer yogurt and rhubarb in parfait dishes.
