Ingredients

  • 1 lb. chicken breast
  • 2 tbsp vegetable oil
  • 1/4 C flour
  • 1/4 C vodka
  • 1/2 C chicken broth
  • 2 tbsp lemon juice
  • 1/2 C tomatoes, seeded and diced
  • 2 tbsp heavy cream
  • 2 C cooked white rice

Preparation

Step 1

Season chicken breasts with salt and pepper. Dust with flour. Coat a nonstick saute pan with pam. Heat oil in pan. Add breasts and saute on both sides until browned. Transfer breasts to platter and keep warm.
Pour fat from pan and deglaze with vodka AWAY FROM FLAME. Cook vodka until nearly evaporated. Add broth and lemon juice. Return breasts to pan and cook on each side for 1 minute. Transfer breasts to warm plate.
Finish sauce with tomatoes and cream. Heat through.
Put rice on plate. Top with breast and sauce.
