Ingredients
- Crust:
- 1 cup flour
- 1/2 tsp salt
- 1 tblsp sugar
- 1/2 cup butter
- 1 tsp lemon rind
- 1 egg yolk
- 2 tblsp ice water
- Filling:
- 5 8 oz packages cream cheese
- 1 1/2 cups sugar
- 1 tsp salt
- 2 tblsp flour
- 5 whole eggs
- 2 egg yolks
- 1/2 cup cream
- 1 tsp vanilla

Step 1
Mix the ingredients for the crust as you would a pie crust. Then you roll out a round that will fit into the bottom of a large springform, then roll out a long stipe that you need to put along the sides. Gently pat them together
Filling:
Cream the cheese, sugar salt and flour. Add the eggs and yyolks one at a time. Cream well. Add the cream and vanilla at the last.
Bake:
425* for 15 minutes
225* for 1 hour, till it is set
Now turn of the oven, crack the door and let the cheesecake cool in the oven.
Topping:
Sometimes mom would put a sweetened sour cream on the top of the cooked cake and cook it for 15 minutes and then cool as directed. Them add fruit if desired.
