Ingredients
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/4 cup vodka
- 1 (28-ounce) can diced tomatoes, undrained
- 1 (8-ounce) container mascarpone cheese
- 2 tablespoons coarsely chopped fresh basil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pound fettuccine

Preparation
Step 1
1.In a medium saucepan, heat oil over medium heat. Add garlic, and sauté 1 to 2 minutes, just until golden.
2.Add vodka and tomatoes with their juice, and bring to a boil. Reduce heat to low and simmer 15 minutes.
3.Add mascarpone cheese, basil, salt, and pepper; stir until thoroughly combined and cheese is melted.
4.Meanwhile, in a soup pot, cook fettuccine according to package directions. Drain, return fettuccine to pot, and pour tomato and cheese mixture over it. Serve immediately.
