Ingredients

  • 2 yellow peppers
  • 3 red peppers
  • 1 slice prosciutto, chopped
  • 1 t olive oil
  • 1 t. red wine vinegar
  • 1/2 t. oregano
  • ground pepper
  • 1 clove minced garlic
  • 1/4 C chopped basil
  • 1/4 C chopped micoise olives

Preparation

Step 1

Cut bell peppers in half lengthwise. Place skin sides up on foil-lined baking sheet; flatten with hand. Broil 15 min til blackened. Place in plastic bag; seal. Let stand 15 min. Peel & cut in 1" strips.
Combine peppers, prosciutto & next 5 ingredients in med bowl, stirring til well blended. let stand 30 min. Sprinkle with basil & olives & serve.
