Lemon Poppy Seed Cake

  • Glaze:
  • 1 pkg lemon cake mix
  • 3 eggs
  • 1 1/3 c. orange juice
  • 1/2 c. vegetable oil
  • 2 to 3 T. poppy seeds
  • 1 t. grated lemon peel
  • 1 t. grated orange peel
  • 2 c. confecioners sugar
  • 4 - 5 T. orange juice

Preparation

Step 1

Mix cake mix, eggs, orange juice and oil. Beat on medium speed for 2 minutes. Fold in the poppy seeds and the lemon and orange peel.

Pour into a well greased and floured 10x13 cake pan. Bake at 350 for approx 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

In a small bowl combine the conf. sugar and orange juice until smooth. Poke approx 12 holes with a round handled spoon. Slowly pour a small amount of frosting down each poked hole. Drizzle the remaining frosting over the top of the cake.
