Ingredients

  • Candied Pecans:
  • 5 cups spring salad mix
  • 1/2 cup sliced red seedless grapes
  • 1/4 cup chopped Medjool dates
  • 1/3 cup crumbled blue cheese
  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup pecans
  • 2 tbsp butter, melted
  • 3 tbsp brown sugar

Preparation

Step 1

To prepare the candied pecans, mix ingredients together and spread on a shallow pan covered with foil. Bake at 350 F until toasted. Let cool and then chop.

Toss salad mix, grapes, dates, pecans and cheese in a large salad bowl.

In a separate bowl, whisk together olive oil, vinegar, salt and pepper. Pour over the salad and toss.
