Sauteed Spicy Lemon Baby Carrots 0 Picture

Ingredients

  • 1/3 cup vegetable oil
  • 5 pounds baby carrots
  • 1 cup cold water
  • 2 tbsp lemon juice
  • 1 to 1 1/2 tbsp finely chopped garlic
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • Sivered green onions, for garnish (optional)

Preparation

Step 1

Heat oil in a large saute pan over medium heat. Add carrots, stirring to coat with oil.

Stir in water and cook, covered, until carrots are almost tender, about 10 minutes, depending on size of carrots.

Remove cover and cook over high heat until any remaining water evaporates.

Saute carrots over high heat, stirring frequently, until lightly browned and just tender, about 5 minutes. Take care not to overcook.

Stir in lemon juice, garlic, red pepper flakes and salt. Heat, stirring constantly, until carrots are hot and well coated with seasonings, about 2 minutes.

Garnish each serving with green onion slivers, if desired.
