Ingredients

  • 2 cups water
  • 4 (16 oz) cans pinto beans, rinsed and drained
  • 2 bay leaves
  • 1 (14 oz) can chicken broth
  • 1 medium onion, peeled and quartered
  • 2 bacon slices (uncooked), chopped
  • 2 cups chopped onion
  • 1 TBS minced garlic
  • 2 tsp chili powder
  • 3/4 cup ketchup
  • 1/3 cup packed brown sugar
  • 3 TBS Dijon mustard
  • 2 TBS Worcestershire sauce
  • 1/4 tsp black pepper
  • 1 (12 oz) bottle amber ale

Preparation

Step 1

Heat oven to 300.
Combine first 5 ingredients in Dutch oven; bring to a boil. Reduce heat and simmer 15 minutes. Drain over large bowl; reserve liquid. Discard onions and bay leaves. Cook bacon in a large skillet til crisp. Remove from pan. Reserve 1 TBS drippings in pan. Add chopped onion to pan; cook 10 minutes. Add garlic and chili powder; cook 1 minute. Add ketchup and next 5 ingredients and 1/2 cup reserved liquid to pan. Bring to a boil; add beans and bacon. Reduce heat to simmer and cook for 10 minutes. Place in 13x9-inch baking dish coated with spray. Bake 45 minutes.
