- 4 salmon filets ( 1 lb total)
- 2 cups fresh spinach, chopped
- 1 cup sliced fresh mushrooms
- 1 tomato, chopped
- 1/3 cup sundried tomato vinaigrette dressing

Preparation
Step 1
Directions:
1. Preheat oven to 375° F.
2. Place fish fillets, skin side down, in a 13 x 9 inch baking dish sprayed with cooking spray.
3. remaining ingredients and spoon over fish. Bake 20 to 25 minutes or until fish flakes easily with fork.
Yield: 4 Servings Serving Size = 1 filet
