Caramelized Cauliflower

Roasting cauliflower eliminates its cabbage-like aroma, as it tenderizes and caramelizes this healthy vegetable. Preparation is a snap; this is an easy one for even novice cooks.

- 1 head of cauliflower, about 1-1/2 pounds
- 2 Tablespoons olive oil
- 1/2 teaspoon kosher salt

Preparation
Step 1
Preheat the oven to 400 degrees.
Core the cauliflower, and cut/separate into florets, about 1-inch in diameter. Place them in a large bowl, and dress them with the 2 T. olive oil and 1/2 tsp. salt, tossing to be sure they are evenly coated.
Spread the florets out in a single layer on a rimmed baking sheet.
Roast for 25 to 35 minutes, stirring them up once or twice, until they are nicely browned and crisp-tender. Serve immediately.
You can also add a dipping sauce made by mixing 1/2 cup of plain yoghurt with 1 Tlbsp of dijon mustard, and seasoning to taste with just a bit of curry powder and cayenne pepper.
