Ingredients
- 1 pie crust
- 1 teaspoon butter
- 1 1/2 cups chopped onion
- 1/4 pound sliced mushrooms
- 1/2 teaspoon salt
- pepper, to taste
- 1 pinch thyme
- 1/2 teaspoon dry mustard
- 4 large eggs, or 2 eggs and 2 egg whites
- 1 1/2 cups milk
- 2 tablespoons flour
- 1 1/2 cups swiss cheese, grated
- paprika

Preparation
Step 1
1. Heat oven to 375.
2. Saute onions in butter a few minutes, until they begin to soften. Add mushrooms-dry mustard. Saute about 5 minutes more and take off heat.
3. Combine eggs, milk and flour in a food processor.
4. Spread cheese in pie crust and then onions/mushrooms on top. Pour in custard and sprinkle with paprika.
5. Bake 35-45 minutes or until solid in center. Serve hot, warm, or at room temperature.
Notes: Easy and very good - just as good as the higher-fat versions. Used more mushrooms (probably 10 ozs), and skim milk. Left out paprika. Would probably be my go-to quiche recipe.
