Sweet Baked Ricotta with Pumpkin

Ingredients
- 2 cups part-skim ricotta cheese
- 2 eggs
- 1/2 cup sugar
- 1/2 cup flour
- 1/2 cup pumpkin
- 2 tablespoons molasses
- 1 pinch cloves
- 1 pinch cinnamon
- 1 pinch nutmeg
- 1 pinch ground ginger

Preparation
Step 1
1. Heat oven to 325.
2. Puree all ingredients until smooth. Pour into an 8" springform pan or a glass pie plate.
3. Bake 45-50 minutes. Let cool, then chill, covered, at least 3 hours. Serve cold.
Notes: I always up the spices considerably -
Light and refreshing - perfect after a heavy meal!
