Spicy Soba Noodles with Chicken in Peanut Sauce 0 Picture

Ingredients

  • 1/3 cup reduced-fat peanut butter
  • 2 tablespoons honey
  • 1 tablespoon chopped peeled fresh ginger
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon crushed red pepper (1 to 2)
  • 1 garlic clove, minced
  • 1 can fat-free chicken broth
  • 1 pound skinless boneless chicken breasts
  • 5 cups cooked soba (buckwheat noodles)
  • 1 carrot, peeled and shredded
  • 6 tablespoons sliced green onions
  • 6 tablespoons chopped unsalted dry-roasted peanuts

Preparation

Step 1

1. Combine peanut butter-garlic, and 1/3 cup broth; whisk until smooth.

2. Bring chicken and 1-2/3 cups broth to a boil; reduce heat, simmer 4 mins or until done. Take off heat; let stand 20 mins. Drain and cut into 2" pieces.

3. Toss with carrot, peanut sauce, and noodles. Sprinkle with onions and peanuts.

Notes: Delicious!! And very easy to make. Used crunchy peanut butter, left out the peanuts on top, 3 carrots instead of 1. Also used tofu instead of chicken - marinated in soy sauce, garlic, ginger, and sesame oil then pan-fried before adding in.
