Ingredients
- 1 teaspoon coriander seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried hot red pepper flakes
- 1 teaspoon kosher salt
- 2 pounds sweet potatoes, in 1" wedges
- 1 tablespoon vegetable oil

Step 1
1. Heat oven to 425°.
2. Coarsely grind coriander-pepper flakes in an electric coffee/spice grinder. Add salt.
3. Toss potatoes with oil and spices in a large roasting pan, roast 20 mins. Turn and roast until tender and slightly golden, 15-20 mins more.
Notes: Recipe originally called for 3 tbs oil.
