Ingredients

  • 1 lb frozen cheese tortellini
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 3 Tbsp unsalted butter
  • 2 cloves garlic, finely chopped
  • 1-1/2 cups frozen peas
  • Kosher salt and pepper
  • 2 Tbsp chopped fresh tarragon
  • 1/2 cup grated Parmesan

Step 1

Cook the tortellini according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until soft, about 6 min. Increase heat to medium-high. Add the butter and cook until it turns golden brown, about 3 min. Stir in the garlic, peas, 1/2 tsp salt, and 1/4 tsp pepper and cook until heated through, 2-3 min. Add the tortellini, tarragon, and half the Parmesan and toss. Divide among bowls and sprinkle with the remaining Parmesan.
