Crazy Mixed Up Tempeh Burritos 1 Picture

Ingredients

  • Sauce:
  • 1/2 cup fresh lemon juice
  • 1/2 cup fresh lime juice
  • 4 Tbs tequila
  • 2 Tbs maple syrup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp sweet or smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/8 tsp liquid smoke
  • Burrito Ingredients:
  • 1 8-oz package tempeh, cut into small cubes
  • 1 red onion, diced fine
  • 3-4 handfuls of spinach
  • 1 large very ripe plantain, peeled and cut into small chunks
  • 2 cups brown rice, cooked
  • 1 ripe avocado, slightly mashed
  • 8 large wheat tortillas

Preparation

Step 1

Whisk together sauce ingredients, and set aside.
Steam tempeh for 10 minutes. Cool, and then place in a large container with a tight-fitting lid. Pour sauce over tempeh and marinate for 15 minutes or longer.

After tempeh has marinated, preheat oven to 400°. Heat a large skillet over medium heat, add tempeh with marinade, and onions to skillet. Stir to combine, and cook until marinade has evaporated, about 10 minutes. Meanwhile, place plantain on silpat-covered cookie sheet and roast for 5-7 minutes.

Add brown rice to skillet, stir, and then add spinach. Cover and cook just until spinach is wilted.

Remove plantains from oven, and stir into filling ingredients in skillet. Remove from heat.

Warm tortillas, and place several tablespoons of filling into each one, top with some avocado, and roll into a burrito. Repeat with remaining tortillas.
