Ingredients
- 3-4 lbs. chicken, cut into 8-10 pieces
- 2 cups buttermilk
- 2 t. salt
- 1 t. pepper
- 1 t. paprika
- 1 1/2 cups self-rising flour
- oil for frying

Step 1
Place chicken pieces in large nonreactive bowl; cover with buttermilk. Cover bowl; refrigerate for at least 6 hours.
Drain chicken; season with salt, pepper and paprika. Add flour to large plastic or paper bag. Add chicken; shake until pieces are thoroughly coated.
To cook in deep fryer, heat oil to 325 degrees. Fry chicken pieces 15 minutes. Or heat 1 1/2" oil in large, preferably cast iron, skillet over medium heat; fry chicken pieces until golden brown and done inside, turning once, 15-25 minutes. Chicken is done when juices run clear. (If chicken is browned but not done, bake in preheated 400 degree oven, 10-15 minutes.)
