Ingredients
- 1 head red cabbage, shredded
- 1 bunch scallions, sliced on bias into 1" strips
- 1 cup light mayonnaise
- 1 tablespoon light brown sugar
- 2 tablespoons hot chile sesame oil
- Salt, to taste
- pepper, to taste
- 1 cup peanuts

Step 1
1. In a large bowl, mix the cabbage and scallions with the mayonnaise, sugar, and hot oil and seasoning. Let sit overnight, or at least 4 hours.
2. Mix in the peanuts before serving. Serve with an array of smoked fish, raw vegetables, and pickles.
Notes: didn't have scallions, so just used regular onion, and didn't have hot chile sesame oil, so used a bit of sriracha sauce and a bit of sesame oil. Original recipe also called for regular mayo and I used light. Oh - and I completely forgot about the peanuts, and I don't think they were necessary. We ate some right after it was made and then later after it had chilled a bit - not too much different in flavor. Delicious and very different!
