Ingredients
- 1 1/4 1 1/4 1/4 C. cake flour, sifted
- 1 1/2 1 1/2 12 C. egg white (about 12 eggs)
- 1/2 1/2 1/2 tsp. salt
- 1 1 1 tsp. cream of tartar
- 1 1/2 1 1/2 1/2 C. sugar
- 3/4 3/4 3/4 tsp. vanilla
- 1/4 1/4 1/4 tsp. almond extract

Preparation
Step 1
In a large bowl add egg whites and salt. Beat in high speed until foamy. Lift beaters up and down to incorporate more air during mixing process. Add cream of tartar and whip until stiff or until egg whites stand up in points, but not dry. Add sugar slowly, one teaspoon at a time, on a low speed. Add flavoring and bake in an un-greased angel food pan in 325F oven for 1 hour and 10 minutes.
